Breakfast Bake

Ingredients

  • 6 eggs
  • 2 cups whole milk
  • 2 cups shredded cheddar
  • 1 lb. ground sausage
  • 20 oz. shredded frozen hash browns
  • Salt/pepper

Directions

Fully cook sausage. Set aside. Whisk together eggs and milk, adding a pinch of salt/pepper. In a 9×13 casserole dish, mix hash browns, cheese, and sausage. Pour eggs/milk mixture evenly over hash browns mixture. Cover with foil. Bake at 350 degrees for 45 minutes. Remove foil. Bake for 15 more minutes.

Everything Entrée

Ingredients

  • NY strip steak, any size (2)
  • 2 tbsp. olive oil
  • 2 tsp. minced garlic
  • Salt/pepper
  • 4 fresh jalapeño peppers
  • ¼ cup shredded cheddar
  • 4 oz. cream cheese
  • 4 strips bacon
  • 1 cucumber
  • 5 cherry tomatoes
  • 2 tbsp. red onion
  • 2 tbsp. crumbled feta
  • 6 kalamata olives

Directions

Steaks – Add oil to a frying pan over medium heat. Season steaks with salt/pepper/garlic. Cook steaks to preferred doneness in pan, covering with a lid to cook evenly.

Jalapeño poppers – Halve jalapeños lengthwise. Remove seeds/chop off stems. Soften cream cheese in the microwave. Mix cream cheese and cheddar in a bowl. Spoon mixture into jalapeño halves. Halve bacon slices lengthwise. Wrap each stuffed jalapeño with bacon half. Bake at 400 degrees for 25-30 minutes.

Mediterranean salad – Skin/slice cucumber. Slice onion and tomatoes. Arrange on a plate. Top with feta and olives.

Serves two.

Creative Cookies

Ingredients for cookies

  • 1 cup almond flour
  • 2 tbsp. coconut flour
  • ¼ cup erythritol (Stevia)
  • ¼ tsp. salt
  • ¼ cup softened unsalted butter, cubed
  • 1 tbsp. softened cream cheese
  • ¾ tsp. vanilla extract
  • ½ tsp. almond extract

Directions

In a mixer, combine both flours, erythritol and salt on high for 45 seconds. Stop the mixer. Add butter, cream cheese and both extracts at medium speed until texture is clumpy and can be rolled into a ball. Refrigerate dough for 30 minutes. Roll out dough between two pieces of parchment paper. Use cookie cutters to shape dough. Bake at 350 degrees for 9-11 minutes. Cool on a rack completely before icing.

Ingredients for icing

  • ½ cup softened unsalted butter
  • 1 cup Swerve confectioners
  • 1 tsp. almond extract
  • 2 tbsp. unsweetened Silk coconut milk

Directions

In a mixer, combine ingredients until smooth. Add food coloring for decoration. Alternatives to icing are peanut/almond butter and melted chocolate chips.
