Mealtime for the MilSpouse: Simple, Speedy, Hearty, & Delicious Recipes

Mealtime can be without a doubt a hectic time of the day. All we really want is delicious and healthy food that we can whip up quickly without too much difficulty and fit in our budget. These 5 recipes can provide just that. Each recipe can easily be adapted and altered based on what you prefer or what you happen to have in the pantry or refrigerator! 30 minutes and a couple pots and pans are all you should need to become the chef of the night without even trying too hard!

Beef Stew Beauty

Ingredients

  • 4 cups water
  • 2 cups dry rice
  • 1 Tbsp Olive Oil
  • 1 tsp salt
  • 1 Tbsp Olive Oil
  • 1 onion, minced
  • 1 tsp salt
  • 1-pound steak, thinly sliced
  • salt, pepper, garlic, chili powder, parsley, turmeric & cumin
  • 2 to 3 Roma tomatoes, chopped
  • 5 small red potatoes, peeled and sliced
  • 3 cups greens, chopped

Directions

1. Bring pot of water, salt, oil and rice to a boil. Simmer 15 minutes or until cooked.

2. Heat pan to medium high. Add olive oil, onion and salt to pan. Slightly brown.

3. Add steak to pan & season liberally.

4. Slightly brown.

5. Add and fully cook tomatoes and potatoes.

6. Season again if needed. Add water as desired.

7. Add and cook greens to desired texture.

Simmer as desired & Enjoy.

Carne & Celery Spaghetti

Ingredients

  • 1 box spaghetti
  • 1 Tbsp Olive Oil
  • 1 tsp salt
  • 1 Tbsp Olive Oil
  • 1 onion, chopped
  • 1 tsp salt
  • 1-pound steak or stew meat, sliced
  • salt, pepper, garlic, oregano, chili powder
  • 2 handfuls grape tomatoes, chopped
  • 3 cups baby spinach, 5 stalks celery, all chopped

Directions

1. Bring pot of water to a boil. Add dry spaghetti, olive oil and salt. Cook 10 minutes or as desired.

2. Heat pan to medium high. Add olive oil, onion and salt to pan. Slightly brown.

3. Add sliced steak to pan & season liberally.

4. Slightly brown.

5. Add and cook down tomatoes.

6. Add and cook vegetables to desired texture.

Simmer as desired & Enjoy.

Cozy Cabbage Rolls

Ingredients

  • 4 cups water
  • 2 cups dry rice
  • 1 Tbsp Olive Oil
  • 1 tsp salt
  • 1 whole cabbage, core removed
  • 6 cups water
  • 1 Tbsp Olive Oil
  • 1 onion, chopped
  • 1 tsp salt
  • 1-pound steak or desired protein
  • salt, pepper, garlic, chili powder, parsley, cilantro
  • 2 to 3 Roma tomatoes, chopped
  • 1/2 block cheese, chopped or grated
  • 4 green onions, sliced

Directions

1. Bring pot of water, salt, oil and rice to a boil. Simmer 15 minutes or until cooked.

2. Bring second large pot of water to a boil and add cabbage.

3. Heat pan to medium high. Add olive oil, onion and salt to pan. Slightly brown.

4.  Add steak or alternative protein to pan & season liberally.

5.  Slightly brown.

6. Add and cook down tomatoes. Simmer until cooked as desired.

7. Carefully drain water from pot of cabbage. Carefully remove each cabbage leaf.

8. Begin filling each leaf with the rice, steak, cheese and green onions.

Roll Up & Enjoy.

Spicy Fried Egg Salmon & Asparagus

Ingredients

  • 2 cups couscous
  • 4 cups water
  • 1 Tbsp Olive Oil
  • garlic powder, parsley & salt
  • 1 Tbsp Olive Oil
  • 1 onion, sliced
  • 1 tsp salt
  • 1-pound salmon
  • salt, pepper, chili powder, lime juice, garlic, parsley, paprika
  • 1 bunch of asparagus, trimmed
  • 2-3 eggs

Directions

1. Bring pot of water to a boil. Add couscous, olive oil and salt. Cook 10 minutes or until water is evaporated.

2. Heat pan to medium high. Add olive oil, onion and salt to pan. Slightly brown.

3. Add salmon to pan & season liberally.

4. Cook thoroughly.

5. Add asparagus & eggs. Cover.

Simmer slowly until desired & enjoy!

Cozy Curry Chicken Soup

Ingredients

  • 4 cups water
  • 2 cups dry rice
  • 1 Tbsp Olive Oil
  • 1 tsp salt
  • 1 Tbsp Olive Oil
  • 1 onion, chopped
  • 1 tsp salt
  • 1-pound boneless, skinless chicken thighs
  • salt, pepper, garlic, parsley, turmeric & cumin
  • 2 to 3 Roma tomatoes, chopped
  • 3 handfuls kale, chopped
  • 2 cups celery & carrots, chopped

Directions

1. Bring pot of water, salt, oil and rice to a boil. Then simmer 15 minutes or until cooked.

2. Heat pan to medium high. Add olive oil, onion and salt to pan. Slightly brown.

3. Add chicken to pan & season liberally.

4. Slightly brown and mash with wooden spoon.

5. Add and cook down tomatoes.

6. Add and cook vegetables to desired texture.

Simmer as desired & enjoy!
