Easy Recipes to Make for Cinco De Mayo

Cinco De Mayo is right around the corner on May 5th, 2013. It’s celebrated as a way to observe the cause of freedom and democracy during the first years of the American Civil War. Will you be cooking up some new recipes or preparing old family favorites? A couple of friends shared these surprisingly easy, yet tasty recipes to cook for Cinco De Mayo, with just a few items that you should already have in your kitchen.

Chipolte Chicken Breasts and Pork Chops

Ingredients needed:

  • Mrs. Dash Chipotle seasoning
  • A ziplog bag
  • A little EVOO (Extra virgin olive oil)

Directions: Season either meat, put in Ziplock bag, add EVOO. Shake and store in fridge overnight. You can put them on your grill or comal. Garnish with lime and a little cilantro. For sides you can make corn on a cob or grilled veggies.

Pico de Gallo

Ingredients needed:

  • Cilantro
  • Avocado
  • Tomato
  • Onion
  • Fresh Jalapeno pepper
  • Fresh lime

Directions: Dice 1-2 tomatoes and 1/2 of the small onion. Chop fresh cilantro. Seed and dice one jalapeno pepper. If you want to add more spice to it, use Serrano peppers. Mix together in a large bowl. Dice avocado & add to mixture. Squeeze fresh lime over the mixture. Add salt to your desired taste. Serve with tortilla chips and enjoy!
