I don’t know about you, but I love hearing what new national holidays people have come up with. There is Fun at Work Day, Peanut Butter Day, Pie Day, Squirrel Appreciation Day; if you can think of it, there is a day celebrating it! This February 3rd happens to be one of my favorite days, it’s National Carrot Cake Day!
Carrot cake has a special place in my heart because it’s always been my favorite cake and my mom has gone out of her way to make my birthdays extra special by making me a homemade carrot cake every year. My birthday is on Christmas Day, so birthday celebrations are often worked in among church plans, family plans and other Christmas activities. This year, since Christmas Eve was on a Sunday, our whole family was able to go to church together, which was wonderful, but that meant we needed Christmas Eve dinner to be easy. I suggested breakfast for dinner because who doesn’t love pancakes and bacon at any time of the day? Little did I know that my mom found a recipe from Taste of Home for carrot cake pancakes. Before traveling to our home for Christmas, she cooked several batches of these delightful cakes and froze them, so we were able to eat them the whole week!
The celebrated golden cakes are filled with carrot surrounded by fluffy pancake mix and topped with a sweet, creamy maple cream cheese frosting. You can also top your pancakes with walnuts and more shredded carrots if desired.
Here we are, already jumping into the month of February. It seems like I blinked, and January was over. It is cold, windy, and dreary in many parts of the US right now and carrot cake pancakes are the perfect way to warm up the day! So, grab an apron, your kiddos or bestie and get in the kitchen for some pancake making!
