Triple Choc Zen Fuze Protein Muffins

What You’ll Need:
2 Tbsp hemp hearts
1 Tbsp each:ground flax, chia, coconut sugar
1 tsp stevia
1/8 tsp pink Himalayan sea salt
6 egg whites & 1 whole egg, beaten
2oz coconut milk
1 tsp vanilla extract
4oz applesauce
5 drops peppermint essential oil
1 Tbsp raw almond butter
1 Tbsp butter flavored coconut oil(melted)
1 large zucchini finely shredded(incl peel), drained
Directions:
Spray 12 reg size (paper lined) muffin cups(preferably avocado/coconut oil). Fill each one half full and then add 1/2 Tbsp Enjoy Life dark chocolate morsels, fill to top with remaining batter. Add a few choc chips to top.
Bake at 350° for 35 min. Let cool for 1 min before transferring to cooling rack. Once cooled completely, store in refrigerator.

*These can be made as cookies by doubling the coconut flour and stirring the chips into the batter. Spray your cookie sheet and drop spoonfuls of batter on it(flatten them to 1cm or less ). Bake 15-20 min.
